Tuesdays with Dorie with K: Granola Energy Bars

Here we are again, with a much easier recipe for Tuesdays with Dorie. In fact, the only challenge was finding the brown rice syrup. Three stores later, we were ready to go with more than a few changes to the recipe. K was rather enthusiastic about some of the listed add-ins so almonds, sunflower seeds, pumpkin seeds,  dried fruit and coconut became pecans, dried nectarines and chocolate chips.

The verdict: Easy to make and I appreciate the flexibility of the recipe, but this is not one that will go into regular rotation at our house. K is, sadly, not a huge oats fan and I just don't eat a lot of granola or energy bars.

Next up: Brown Butter and Vanilla Bean Weekend Cake!

  1. They were definitely easy and flexible. Sorry they weren't a hit with you, dried nectarines and chocolate certainly sound delicious!

  2. I think half the posters used that exact brand of rice syrup -- I know I did! And your bars look great!

  3. The flexibility of this recipe is awfully nice. It is fun to see what everyone chose this week and also how they cut their bars! I love that photo where your big green spoon is mixing up all those wonderful ingredients. Sounds like you liked them as much as we did.

  4. I can't wait to make the brown butter and vanilla bean cake (even though I did enjoy the granola bars a lot).

  6. Dried nectarines are like gold in our house and don't make it past Oct. (we put up our own)I do wish I could find a good hiding place so I could bring them out in the new year.
    cheers!

  8. They look and sound good! I made these twice. Once with the rice syrup and once with Lyle's Golden Syrup - I preferred the Lyle's.
