Tuesdays with Dorie with K: Tiger Cakes

"What is a Tiger Cake?"
"Read the recipe."
"We have everything, even the almond flour, so I can make these while you are at spinning."
"Excellent. My favorite kind of Tuesdays with Dorie project."

K's report: I liked the chocolate and almond together. We did not have mini muffin tins, so I made these as full size cupcakes. They were easy and I'd like to make them again, though they did stick to the muffin liners, which I think I was not supposed to use. Next time I will put chocolate on top.

  1. They are delicious! I think these have a tendency to stick to anything (who would think that would be possible with all the butter in the recipe?) Be sure to butter the pan like crazy when you make them again.

  2. I love the recipes that don't require a trip to the store, too!

  3. I wish someone would bake for me while I was at the gym:) I used a non-stick pan which worked perfect. Do use the chocolate topping as it really made them great.

  4. I think a bigger size is a great idea!
Mine were small and way to easy to keep popping into my mouth losing track of how many I had eaten!

  5. I could have certainly eaten a full size cupcake version of these!

  6. I made some intermediate size ones by half filling a full size pan. All good!

  7. Spinning + someone to make tiger cakes for me to eat afterwards = perfection! How did you get so lucky? :)
