Tuesdays with Dorie with K: Apricot Raspberry Tart

My favorite in this project so far? Probably. Tuesdays with Dorie returns, this time with an Apricot- Raspberry Tart.
As you can see, we did not skimp on the fruit, because when it is so good, why would you?

The recipe: K did this one on her own because I am rather distracted by the Tour de France. The tart crust is one that she has now made numerous times and once again, it came together easily. For scheduling reasons, she was unable to make the ladyfingers, so subbed some from a local shop. Honestly, I would probably skip them completely next time, as I thought they added little except bulk. Maybe instead a layer of almond paste underneath the fruit?

The verdict: This is exactly the sort of thing we will make again and again, as fruit desserts are my generally my top choice.

  2. I had spot on the same experiences and observation with my tart ! Had the ladyfingers on hand (kismet in my opinion) and while lovely, I will be adding the almond paste next time for a little more texture and flavor. Love this crust every time I make it - it is no fail for sure. Hope you enjoyed the TdF :)

  4. I definitely prefer fruit desserts when the fruit is in season... Otherwise defer to non fruit desserts. Yours turned out so lovely!

  5. I would definitely recommend the almond paste and it was incredibly easy to make. Although it is a bit hard to spread on the bottom of the tart, so I would just pipe it in using a small round tip.
